I BELIEVE IN BROCCOLI AND BROWNIES

Frozen Pizza Kits

2/4/2019

We’ve all been there – it’s dinner time, we want something warm and hearty, but just can’t muster the energy to make something. So, we swing by the local pizza shop to grab dinner. A pizza kit can be almost as fast, but the best part is you can don’t have to leave the house. Just pull the pizza kit out of your freezer and you’ll have a delicious, warm, dinner.

Freeze your favorite pizza sauce (homemade or store bought) in small amounts. You can use an ice cube tray, but I prefer to freeze in popsicle molds.

Once frozen remove the sauce and place in a plastic sandwich bag. I like just a small amount of sauce on my pizza. Two “popsicles sauces” are the perfect amount on one pizza for my taste.

Choose your toppings and place in plastic sandwich bags. Place items that are more liquid and wet, such as pineapple in a separate bag. A can of pineapple or olives or a container of pepperoni are always too much for one pizza. Then you are stuck with leftovers. With these pizza kits you can make two or three kits from the ingredients and not waste food.

Now prep the dough. Make your favorite pizza dough (or purchase it from the store). Form the dough into a small round and place in a quart size freezer bag. Slide the bagged sauce and bagged toppings into the freezer bag. Write baking instructions on the bag.

For the cheese just buy shredded cheese and freeze the package. Shredded cheese freezes beautifully.

To prepare the pizza, pull the kit from the freezer and place in refrigerator to thaw. I pull it out in the morning before work and it is ready to assemble and bake when I get home in the evening.
Roll out the dough. (By the way: I love the pastry cloth my mom made me for working with any type of dough. It is much better than a floured counter.)

Spread the sauce over top, sprinkle with cheese, and add toppings.

Bake and enjoy. I like my crust thin and crispy, so I bake at a high temperature 450-475 F for 12-15 minutes.
