100% Fruit Ice Cream

Alright, alright, it is technically not ice cream if the recipe is 100% fruit. But the frozen bananas in this tasty frozen treat give it an ice cream like texture. And, the recipe is embarrassingly simple.
First cut up 1-1/2 bananas into chunks and freeze. Next pop the frozen bananas into your food processor.

Blend until the bananas start to come together. They will crumble, then eventually get smooth.

Next add in ½ cup frozen fruit. I used strawberries picked from my strawberry patch, then frozen.

Process fruits until smooth and the consistency of soft-serve ice cream. It takes some patience and you will need to stop and scrape down the bowl occasionally.

For easier blending consider splitting strawberries into part frozen and part thawed. Or try blending the bananas and adding some freshly diced strawberries. I like adding a little vanilla to mine, but you can leave it out or try some different spices.
 
If you don’t eat it right away – I can’t imagine why you wouldn’t. Just pop it into a plastic storage container and freeze.

Try other flavors such as peaches with cloves or pineapple with coconut. How about mixed berries, sweet cherries, or gooseberries? The flavors are as endless as the fruits you use.

100% Fruit “Ice Cream” (aka frozen treat)

1-1/2 bananas cut into chunks and frozen
½ cup frozen strawberries (or fruit of choice)
Flavorings such as vanilla, cinnamon, cloves, as desired
Add-ins chocolate chips, nuts, etc. (if you put these in its not 100% fruit anymore 😊)
 
Place frozen bananas in food processor. Blend until bananas start to come together and are smooth. Add in frozen strawberries (or other fruit). Blend until smooth and the consistency of soft serve ice cream. Scrape down bowl with spatula occasionally to keep blade blending. Alternately blend bananas until smooth. Cut fruit into small pieces and stir into bananas.         
 
The frozen mixture freezes nicely, so this can be made in advance and served later.
