Broccoli, Brownies, and Basics
Pauline Williams, PhD, MPA, RDN, CD
I'm a Registered Dietitian Nutritionist (RDN) who "Believes in Broccoli and Brownies." I grew up on a ranch nestled in the red rocks of southern Utah. As I kid I loved all things basic to home --- cooking, baking, cleaning, sewing, finances, crochet, knitting, refinishing furniture, gardening, crafts and more. My mom was a home economist and worked for our local Extension service. She mentored me through 4-H projects in cooking and sewing (she was an excellent seamstress), sent me to weed the garden, taught me to safely preserve food through canning, and guided me in refinishing old chairs. I always thought I'd be a stay at home mom with numerous kids. But life had something else in store for me -- an advanced degree and career in dietetics spanning more than 20 years including working in a hospital to auditing for the legislature to extension services and finally academia.
In college I majored in dietetics and after graduation began working in a hospital as a clinical dietitian. Overtime my focus in nutrition and health strengthened as I expanded my career and education to include a masters degree in administration and PhD in nutrition. That meant my time for doing all the other things I enjoyed about homemaking seemed to decrease. As I've gotten older I've tried to bring some of those other things back to my life. On this blog you'll get mostly "Broccoli" -- posts about nutrition and health because that is what I live and breathe day to day as a dietitian and university faculty in a dietetics program. You'll see some "Brownies" -- posts with recipes for decadent treats -- because we all need something sweet in our lives. And scattered here and there you'll find some "Basics" about housekeeping, sewing, crafting and more.
